Lesson #2 Lunch glorious lunch

It's amazing how relaxed I've been about the food challenge today. I think it's all owing to the fact that I made sandwiches and packed them up with a few biscuits and a banana in preparation last night. This morning the only task was remembering them which I think was no mean feat at 6 am!! : )

I lasted until 11.00 and then ate the lot. This is a very carbohydrate rich diet and I don't usually pack in the carbs so I'm feeling it with the full tummy!! Tonight Im going to try salmon, sweetcorn & peppers stuffed with rice. Cooking without stock cubes or spices or even pepper is limiting.

But do you know what's best? I feel amazing! Really really grateful for all the items in the food parcel. Whilst everyone is troughing out on their mega lunch, I feel humbled & very happy. Of to join the peace corps to sing Kum by ah now : ) xxx ha ha
